Hot Coco Cupcakes

I am a lover of all things chocolate. I love milk and dark chocolate. And I love coco. Have you ever had Mexican hot coco? it’s not as sweet as the coco that us in the US are used to, but it’s delicious. The other day I came across this recipe and new I had to make them.

The cupcakes turned out really good, kind of chewy and the frosting was amazing. They were really moist. You should totally try them. The hot coco can be found in the Mexican section of most grocery stores. Recipie taken from the sight I found it on, but all the picture are mine.

Abuelita Cupcakes with Cinnamon Buttercream

1 ½ c flour
½ c brown sugar
½ c white sugar
1tsp baking soda
1tbs white vinegar
1c milk
1 disk Abuelita hot chocolate (or any other Mexican bar hot chocolate- Ibarra is another one)

Sift all the dry ingredients together. In a saucepan on medium, heat the milk and add Abuelita. Whisk until it dissolves. Whisk hot chocolate into the dry ingredients. Add vinegar. Bake at 350 for 12-15 mins.

For the Frosting:

2c room-temperature butter
1lb confectioner’s sugar
1tsp vanilla extract
1tbs cinnamon

Combine all ingredients until well-mixed. Add more sugar if you want it stiffer, or a bit of milk if you want it smoother.
